Carrots Vichy Recipe - Cooking Index
4 cups | 440g / 15oz | Bias-sliced carrots, 1/8" thick |
(use a mandolin if available) | ||
1/4 cup | 59ml | Water |
1 tablespoon | 15ml | Butter |
1 tablespoon | 15ml | Sugar |
Nutmeg - to taste | ||
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Place carrots, water, butter and sugar in a 2-quart saucepot over medium-high heat. Bring to a simmer. Cover and cook for 12 to 15 minutes or until carrots are tender. Season with nutmeg, salt and pepper to taste.
This recipe yields 6 side servings.
