1 | Jicama - (abt 1/2 lb) | |
4 | Carrots (medium) | |
5 tablespoons | 75ml | Lime juice |
6 tablespoons | 90ml | Chopped fresh cilantro sprigs |
2 tablespoons | 30ml | Vegetable oil |
1/2 teaspoon | 2.5ml | Pepper flakes |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Seed cucumber and peel jicama. Cut cucumber, jicama, and carrots into 1 1/2-inch-long thin strips. Toss vegetables together with remaining ingredients and season with salt and pepper.
