Brown Rice With Hazelnuts

Recipe Ingredients

1 cup 146g / 5.1ozChopped hazelnuts
  = (Diamond brand recommended)
3 cups 711mlChicken stock
2 tablespoons 30mlButter or extra-virgin olive oil
1 1/2 cups 240g / 8.5ozBrown rice
  = (Uncle Ben's or Near East recommended)
2 tablespoons 30mlChopped flat-leaf parsley

Recipe Instructions

Toast nuts in a small pan over low heat then remove from heat and reserve.

Bring 3 cups stock and 2 tablespoons butter to a boil. Add rice, stir, then return to boil, cover and reduce heat. Simmer rice 17 to 18 minutes, until tender and liquid is absorbed. Remove from heat. Add nuts and parsley as you fluff rice with fork. Transfer to serving dish.

This recipe yields 6 servings.
