Iceberg Lettuce Salad, Tangy Tomato-Tarragon 'French' Dressi

Recipe Ingredients

1/2   Iceberg lettuce head - chopped (large)
1 cup 110g / 3.9ozShredded carrots
1/2   Cherry or grape tomatoes
2 tablespoons 30mlWhite wine vinegar
2 teaspoons 10mlSugar
1 tablespoon 15mlTomato paste
2 tablespoons 30mlChopped fresh tarragon leaves
  = (or 2 tspns dried tarragon)
1/3 cup 78mlExtra-virgin olive oil
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Place lettuce in salad bowl and top with carrots and cherry tomatoes.

In a bowl, combine vinegar and sugar, then whisk in tomato paste. Add tarragon leaves and whisk in oil in a slow, thin stream. Season dressing with salt and pepper, to your taste.

Pour dressing over salad and serve.

This recipe yields 6 servings.
