Iceberg Lettuce Salad, Tangy Tomato-Tarragon 'French' Dressi Recipe - Cooking Index
1/2 | Iceberg lettuce head - chopped (large) | |
1 cup | 110g / 3.9oz | Shredded carrots |
1/2 | Cherry or grape tomatoes | |
2 tablespoons | 30ml | White wine vinegar |
2 teaspoons | 10ml | Sugar |
1 tablespoon | 15ml | Tomato paste |
2 tablespoons | 30ml | Chopped fresh tarragon leaves |
= (or 2 tspns dried tarragon) | ||
1/3 cup | 78ml | Extra-virgin olive oil |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Place lettuce in salad bowl and top with carrots and cherry tomatoes.
In a bowl, combine vinegar and sugar, then whisk in tomato paste. Add tarragon leaves and whisk in oil in a slow, thin stream. Season dressing with salt and pepper, to your taste.
Pour dressing over salad and serve.
This recipe yields 6 servings.
