Ratatouille Veggie Toss Recipe - Cooking Index
2 tablespoons | 30ml | Extra-virgin olive oil |
2 tablespoons | 30ml | To medium zucchini - cut 1" dice (small) |
1 tablespoon | 15ml | Onion - cut 1" dice (medium) |
1 | Stewed tomatoes - (15 oz) | |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
A handful chopped flat-leaf parsley |
Heat a skillet over medium-high heat. Add oil, garlic, zucchini and onions. Toss vigorously for 5 or 6 minutes.
Add tomatoes, salt, pepper, parsley. Reduce heat and simmer 6 to 8 minutes, then serve.
This recipe yields 6 servings.
