Ratatouille Veggie Toss

Recipe Ingredients

2 tablespoons 30mlExtra-virgin olive oil
2 tablespoons 30mlTo medium zucchini - cut 1" dice (small)
1 tablespoon 15mlOnion - cut 1" dice (medium)
1   Stewed tomatoes - (15 oz)
  Salt - to taste
  Freshly-ground black pepper - to taste
  A handful chopped flat-leaf parsley

Recipe Instructions

Heat a skillet over medium-high heat. Add oil, garlic, zucchini and onions. Toss vigorously for 5 or 6 minutes.

Add tomatoes, salt, pepper, parsley. Reduce heat and simmer 6 to 8 minutes, then serve.

This recipe yields 6 servings.
