Roasted Fingerling Potatoes

Recipe Ingredients

2 lbs 908g / 32ozSmall fingerling potatoes
6   Garlic cloves - crushed
1 tablespoon 15mlExtra-virgin olive oil - (to 2) - for drizzling
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Heat oven to 500 degrees.

Spread potatoes out on a cookie sheet. Scatter garlic over potatoes. Coat lightly with extra-virgin olive oil and season potatoes with salt and pepper. Roast until tender, about 20 minutes.

This recipe yields 4 servings.
