Fruited White And Wild Rice Recipe - Cooking Index
2 cups | 474ml | Water |
1 tablespoon | 15ml | Butter |
1 teaspoon | 5ml | Salt |
1/2 cup | 80g / 2.8oz | White rice |
1/2 cup | 80g / 2.8oz | Wild rice |
3 tablespoons | 45ml | Golden raisins |
1/2 cup | 73g / 2.6oz | Drained mandarin sections - (1 small can) - chopped |
2 oz | 56g | Sliced almonds |

3 | Scallions - thinly sliced |
Bring water to a boil with butter and salt. Add white and wild rice blend and golden raisins, stir, return to a boil. Reduce heat, cover the pan and simmer 20 minutes or until just tender. Fluff rice with a fork. Add chopped mandarins, almonds and scallions to the rice. Toss fruited rice to combine and serve.
This recipe yields 4 servings.
