Fruited White And Wild Rice

Recipe Ingredients

2 cups 474mlWater
1 tablespoon 15mlButter
1 teaspoon 5mlSalt
1/2 cup 80g / 2.8ozWhite rice
1/2 cup 80g / 2.8ozWild rice
3 tablespoons 45mlGolden raisins
1/2 cup 73g / 2.6ozDrained mandarin sections - (1 small can) - chopped
2 oz 56gSliced almonds
  = (available on baking aisle)
3   Scallions - thinly sliced

Recipe Instructions

Bring water to a boil with butter and salt. Add white and wild rice blend and golden raisins, stir, return to a boil. Reduce heat, cover the pan and simmer 20 minutes or until just tender. Fluff rice with a fork. Add chopped mandarins, almonds and scallions to the rice. Toss fruited rice to combine and serve.

This recipe yields 4 servings.
