Green Salad With Red Pepper Relish Dressing

Recipe Ingredients

2   Romaine hearts - chopped
1   Bag mixed baby greens - (5 oz)
6   Red radishes - sliced
1 cup 146g / 5.1ozChopped fresh snap peas
6   Scallions - sliced on an angle
  Dressing
3 tablespoons 45mlRed wine vinegar
1   Rounded teaspoon sugar
1/2 cup 118mlRed pepper relish
  = (found on condiment aisle)
1/2 cup 118mlExtra-virgin olive oil
  Coarse salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Combine chopped romaine, baby greens, radishes, snap peas, and scallions in a large salad bowl.

Combine vinegar, sugar and relish in a small bowl. Whisk in oil in a slow stream.

Toss salad with dressing. Season salad with salt and pepper, to your taste and serve.

This recipe yields 8 to 10 servings.
