Green Onion Hash Brown Potatoes Recipe - Cooking Index
2 | Leftover baked potatoes - (to 3) (large) | |
1 tablespoon | 15ml | Vegetable oil |
2 tablespoons | 30ml | Butter |
5 | Scallions, whites and greens - finely chopped | |
Steak seasoning blend - to taste | ||
= (or salt and pepper) |
Scoop cooked potatoes from shells and coarsely chop.
Heat a medium nonstick skillet over moderate heat. Add oil and butter to the pan.
When butter melts into the oil, add green onions and cook 1 minute. Add potatoes and cook, turning occasionally, until potatoes are crusted and golden and onions begin to brown at edges.
This recipe yields 3 to 4 servings.
