Baked Lemon Chicken With Vegetables Recipe - Cooking Index
4 | Boneless skinless chicken breasts - (4 - 5 oz) | |
1 | Garlic clove - crushed | |
1/2 teaspoon | 2.5ml | Oregano |
1/2 teaspoon | 2.5ml | Black pepper - fresh ground |
2 teaspoons | 10ml | Zucchini squash - sliced (medium) |
1 teaspoon | 5ml | Green pepper - cut in strips (medium) |
1/2 cup | 118ml | Low sodium chicken broth |
3 tablespoons | 45ml | Lemon juice |
1 tablespoon | 15ml | White wine |
Place chicken in a casserole dish. Top with the garlic, other seasonings, and the vegetables. Pour in broth, lemon juice and wine. Cover tightly and bake at 350 degrees for 30 minutes or until chicken is cooked through.
