Whipped Jewel Yams

The beauty of this recipe is its simplicity. When cooked in the pressure cooker the yams slip out of their skins, eliminating the need to peel or peel them before cooking.

Recipe Ingredients

5   Firm jewel yams
1 cup 237mlWater
2 oz 56gButter - (1/4 stick)
  Freshly-ground nutmeg
  Salt - to taste

Recipe Instructions

Place trivet in bottom of a 4-quart or larger pressure cooker. Add yams and water.

Close lid and bring pressure to second red ring (15 pounds pressure) over high heat. Adjust heat to stabilize pressure at second red ring. Cook for 15 minutes.

Remove from heat and use Natural Release Method.

Slip the yams out of their skins and mash with butter, nutmeg and salt. Place in a decorative, warmed serving dish.

This recipe yields 6 to 8 servings.
