Oven Roasted Red Potatoes With Rosemary And Garlic Recipe - Cooking Index
1 1/2 lbs | 681g / 24oz | Small new red potatoes - (abt 15) - scrubbed, dried |
1/4 cup | 59ml | Extra-virgin olive oil |
4 | Garlic cloves - (to 6) - crushed | |
1 tablespoon | 15ml | Fresh rosemary |
= (or 1 tspn dried rosemary) |
Preheat the oven to 350 degrees.
Pare a narrow strip of peel from the middle of each potato. In a large bowl mix the oil, garlic, and rosemary; add the potatoes and toss well.
Transfer the potatoes to a shallow baking pan and roast until potatoes are tender when tested with the tip of a knife. Serve hot. These can also be chilled and served with fried chicken or ham.
This recipe yields 6 servings.
