1 cup | 62g / 2.2oz | Green onions - sliced 1/8" thick |
28 oz | 795g | Tomatoes - canned, diced |
15 oz | 426g | Black beans - drained |
1 | Artichoke hearts - cut in quarters | |
1 lb | 454g / 16oz | Pasta - cooked as directed |
1 | Salt | |
1 | Red pepper flakes | |
3/4 teaspoon | 3.8ml | Oregano |
Freshly ground pepper | ||
2 teaspoons | 10ml | Olive oil |
2 | Garlic - minced |
Cook pasta as directed.
Meanwhile, heat olive oil in the bottom of a medium saucepot. Add green onions and sauteefor 5 minutes. Add seasonings and stir for 1 minute. Add tomatoes; cover and simmer for 10 minutes. Add black beans, combine and simmer for 5 minutes. Add artichoke hearts. Adjust seasonings and toss with pasta.
