Garden Pea Salad Recipe - Cooking Index
1 | Very young early peas - (15 oz) | |

1/4 cup | 15g / 0.5oz | Chopped onions |
2 | Boiled eggs - crumbled | |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
2 tablespoons | 30ml | Mayonnaise - (to 3) |
Chopped pimento - optional |
In a colander, drain peas very well. Place drained peas in a medium bowl. Add the onions, crumbled eggs, and mayonnaise, tossing to combine and coat peas. Season to taste with salt and pepper. Add pimento, if using. This recipe is easily doubled or tripled.
This recipe yields 4 servings.
