Garden Pea Salad

Recipe Ingredients

1   Very young early peas - (15 oz)
  = (Lesueur recommended)
1/4 cup 15g / 0.5ozChopped onions
2   Boiled eggs - crumbled
  Salt - to taste
  Freshly-ground black pepper - to taste
2 tablespoons 30mlMayonnaise - (to 3)
  Chopped pimento - optional

Recipe Instructions

In a colander, drain peas very well. Place drained peas in a medium bowl. Add the onions, crumbled eggs, and mayonnaise, tossing to combine and coat peas. Season to taste with salt and pepper. Add pimento, if using. This recipe is easily doubled or tripled.

This recipe yields 4 servings.
