Pineapple Salsa

Recipe Ingredients

1   Ripe pineapple - peeled, cored,
  And diced small - (abt 4 cups)
1 cup 146g / 5.1ozDiced red pepper
1/2 cup 31g / 1.1ozDiced onion
1/4 cup 4g / 0.1ozChopped cilantro
2 tablespoons 30mlChopped fresh ginger
2 teaspoons 10mlCheryl's Hot Sauce - (see recipe)
1 cup 237mlOlive oil
  Kosher salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Mix ingredients together in a bowl, season with salt and pepper, to taste. Add more hot sauce, if you desire.

This recipe yields about 6 cups.
