Coconut Drops

Recipe Ingredients

2 cups 186g / 6.6ozDiced fresh coconut
  = (from 2 to 3 fresh coconuts)
1 1/2 tablespoons 22mlGrated fresh ginger
1 lb 454g / 16ozLight brown sugar
1 teaspoon 5mlVanilla extract
1   Kosher salt
1/2 cup 118mlWater - (to 3/4)

Recipe Instructions

Put all the ingredients into a heavy-bottom saucepan, with just enough water so the coconut will cook. Boil the mixture until it becomes very sticky, about 20 to 30 minutes.

Remove from heat, and beat with a wooden spoon for a few minutes. Then drop by the spoonful onto a greased or parchment lined baking sheet to cool, about 30 minutes.

This recipe yields about 12 drops.
