| 3 | Granny Smith apples - peeled, cored, | |
| And small diced - (6 cups) | ||
| 3 cups | 187g / 6.6oz | Medium-diced Vidalia or other sweet onion |
| 2 cups | 320g / 11oz | Sultana raisins |
| 1 teaspoon | 5ml | Minced ginger |
| 1/2 cup | 99g / 3.5oz | Sugar |
| 1 cup | 237ml | Apple cider |
| 1/2 cup | 118ml | Cider vinegar |
| 1 | Cinnamon stick | |
| 3 | Whole cloves | |
| 1 | Bay leaf | |
| 1/2 teaspoon | 2.5ml | Salt |
| 1/4 teaspoon | 1.3ml | Freshly-ground white pepper |
Place all ingredients in large pot and allow to cook down for 1 to 1 1/2 hours until most liquid evaporates. Season, to taste, with salt and pepper. Store covered in the refrigerator.
This recipe yields 8 servings.
