6 cups | 1422ml | Hydrated instant couscous |
1 | Red onion - small diced | |
1 | Red pepper - medium diced | |
1/2 cup | 46g / 1.6oz | Sliced almonds - toasted |
1 cup | 160g / 5.6oz | Golden raisins |
1/2 cup | 20g / 0.7oz | Chopped flat-leaf parsley |
1/2 | Orange - zested | |
1 | Orange - juiced | |
1/2 | Lime - zested and juiced | |
1/2 | Lemon - zested and juiced | |
1 cup | 237ml | Olive oil |
2 tablespoons | 30ml | Sugar |
Mix hydrated couscous, diced onion, diced pepper, sliced almonds, golden raisins, and parsley. Whisk the together the citrus zest and juice, olive oil and sugar. Pour over couscous mixture and toss.
