Corn Fritters

Serves: 5 people

Recipe Ingredients

1 cup 62g / 2.2ozFresh corn or frozen kernels
2   Eggs - beaten
1/4 cup 15g / 0.5ozAll-purpose flour - plus
1 tablespoon 15mlAll-purpose flour
2 tablespoons 30mlCoarse yellow cornmeal
1/2 teaspoon 2.5mlBaking powder
1 teaspoon 5mlSugar
1/2 teaspoon 2.5mlSalt
1   Cayenne pepper
1   Grated nutmeg
  Bacon drippings - for frying,
  = (or shortening)

Recipe Instructions

In a large bowl, combine all the ingredients.

Add enough bacon drippings or shortening to a cast-iron skillet to make 1/4-inch fat. Drop mixture by the tablespoon into hot skillet and cook 1 minute on each side or until golden brown.

This recipe yields 4 to 5 servings.
