1 tablespoon | 15ml | Cinnamon stick (large) |
1/2 cup | 99g / 3.5oz | Butter |
3/4 cup | 148g / 5.2oz | Vegetable shortening |
1 cup | 198g / 7oz | Granulated sugar |
4 cups | 792g / 27oz | Eggs (large) |
1 lb | 454g / 16oz | Rice flour |
1 1/2 teaspoons | 7.5ml | Baking powder |
2 cups | 292g / 10oz | Finely-grated aged cotija cheese |
Grind the cinnamon in a coffee grinder. Butter a 9- by 13-inch glass baking dish.
In the bowl of an electric mixer, cream the butter and shortening. Add the sugar and whip until light and fluffy. Beat in 1 egg at a time. Sift the rice flour and baking powder into the mixture a little at a time. Stir in the cheese.
Add the batter to the buttered baking dish and cook for 20 to 25 minutes in 425 degree oven until golden brown on the outside.
This recipe yields 6 to 8 servings.
