| 3 | Yellow tomatoes - sliced (large) | |
| Salt - to taste | ||
| Freshly-ground black pepper - to taste | ||
| 4 sections | Thyme - picked | |
| 1 section | Bermuda onion - thinly sliced (medium) | |
| Olive oil - as needed | ||
| Sherry vinegar - as needed |
On a platter scatter tomato slices. Then sprinkle with salt, pepper, and thyme; layer onion slices around on top. Now drizzle with oil and vinegar.
This recipe yields 10 to 12 servings.
