South African Sambal Recipe - Cooking Index
2 cups | 220g / 7.8oz | Grated carrots |
2 cups | 474ml | Grated apples |
1/4 cup | 59ml | Lemon juice |
1 teaspoon | 5ml | Salt |
1 teaspoon | 5ml | Minced garlic |
1 teaspoon | 5ml | Minced ginger |
1 tablespoon | 15ml | Sugar |
1/4 cup | 59ml | Rice wine vinegar |
1 1/2 teaspoons | 7.5ml | Chopped fresh red chilies |
Freshly-ground black pepper - to taste | ||
1/4 cup | 4g / 0.1oz | Chopped cilantro |
Toss carrots and apples with lemon juice and 1 teaspoon salt, let sit 1/2 hour, then squeeze with hands and discard any excess liquid.
Combine with remaining ingredients and mix well. Allow to sit refrigerated for several hours before serving.
