Pineapple Chutney Recipe - Cooking Index
1 | Onion - diced (medium) | |
2 tablespoons | 30ml | Ginger - small dice |
6 | Jalapeños - diced | |
1 tablespoon | 15ml | Cumin - toasted and ground |
1/2 cup | 118ml | Rum |
1 | Pineapple - diced | |
1/2 cup | 118ml | Fresh lime juice |
1/2 cup | 99g / 3.5oz | Raw sugar |
1/4 cup | 4g / 0.1oz | Chopped cilantro |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
In saucepan over medium heat, saute onions, ginger, jalapeños, and cumin for 6 minutes. Add rum, cook until almost all is evaporated. Add pineapple, lime juice, and sugar, bring to simmer and remove from heat. Add cilantro, salt and pepper, to taste.
This recipe yields about 4 cups.
