Pineapple Chutney

Recipe Ingredients

1   Onion - diced (medium)
2 tablespoons 30mlGinger - small dice
6   Jalapeños - diced
1 tablespoon 15mlCumin - toasted and ground
1/2 cup 118mlRum
1   Pineapple - diced
1/2 cup 118mlFresh lime juice
1/2 cup 99g / 3.5ozRaw sugar
1/4 cup 4g / 0.1ozChopped cilantro
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

In saucepan over medium heat, saute onions, ginger, jalapeños, and cumin for 6 minutes. Add rum, cook until almost all is evaporated. Add pineapple, lime juice, and sugar, bring to simmer and remove from heat. Add cilantro, salt and pepper, to taste.

This recipe yields about 4 cups.
