Chayote Salad

Recipe Ingredients

6   Chayote - peeled, sliced thin
  = (a.K.A. Chocho, or Christophine)
2   Yellow peppers - julienned
1   Red onion - thinly sliced
1/4 cup 4g / 0.1ozChopped cilantro
1   Lemon - juiced
1/4 cup 59mlWhite wine vinegar
1 cup 237mlPeanut or vegetable oil
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Toss together in a bowl. Turn out onto a platter and sprinkle with more salt and pepper.

This recipe yields 8 to 10 servings.
