Fried Cheese With Shallot Dressing

Recipe Ingredients

  Dressing
2 tablespoons 30mlOlive oil
2 teaspoons 10mlSherry vinegar
4 teaspoons 20mlMinced shallots
2 teaspoons 10mlMinced parsley
1/2 teaspoon 2.5mlSmall whole or
  Chopped large capers
  Cheese
1/2 lb 227g / 8ozFairly-mild melting cheese, 1/2" thick
  = (such as Spanish Tetilla, Mahon, or
  Goat cheese)
  Flour - for dusting
2   Eggs - lightly beaten with
2 teaspoons 10mlWater
  Breadcrumbs - as needed
  Oil - for frying

Recipe Instructions

In a cup combine the dressing ingredients. Dust the cheese pieces with flour, dip in the egg, then in the crumbs. (May be prepared ahead.)

In a skillet heat the oil at least 1/2-inch deep to about 380 degrees and fry the cheese quickly until golden on both sides. Or, better, use a deep-fryer. Drain. Sprinkle the dressing over the cheese and serve immediately.
