Steamed Mussels With Chicory - {Cozze Con Cicoria}

Recipe Ingredients

6 tablespoons 90mlExtra-virgin olive oil
2 tablespoons 30mlRed onions - thinly sliced (medium)
2 lbs 908g / 32ozMussels - scrubbed, debearded
1 tablespoon 15mlRed chile flakes
1 cup 237mlDry white wine
1   Lemon - quartered, plus
  Lemon wedges - for garnish
1/2 lb 227g / 8ozChicory - cut 1/4" ribbons
1/2 cup 73g / 2.6ozDarkly-toasted coarse bread crumbs
  Hot Chile Oil - (see recipe)

Recipe Instructions

In a 3-quart saucepan, heat the olive oil until smoking. Add the onions and cook until softened but not browned. Add the mussels and toss well. Add the chile flakes, wine and lemon quarters, cover and cook 1 minute.

Remove the lid and add the chicory. Replace the lid and cook 1 minute more, until the mussels have steamed open.

Pour into a warm bowl, sprinkle the breadcrumbs over and serve with the lemon wedges on the side, drizzled with the Hot Chile Oil.

This recipe yields 2 to 4 servings
