Tomato Couscous With Pine Nuts And Dried Figs Recipe - Cooking Index
4 tablespoons | 60ml | Virgin olive oil |
1/2 tablespoon | 7.5ml | Red onion - thinly sliced (medium) |
4 oz | 113g | Dried figs - (2 or 3 pieces) - cut in half |
And thinly sliced | ||
3 tablespoons | 45ml | Pine nuts |
1 | Box couscous - (1 lb) | |
1/2 cup | 118ml | Tomato sauce |
1/2 cup | 118ml | Chicken stock |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
In a 2- to 3-quart saucepan with a lid, heat olive oil until smoking. Add red onion, figs and pine nuts and cook until onion is soft and translucent, about 8 to 10 minutes.
Add couscous, tomato sauce and chicken stock and bring to boil. Remove from heat and cover and let stand 10 minutes. Remove lid, fluff with fork, season with salt and pepper and serve.
This recipe yields 4 accompaniment servings.
