Buneulos - (Fried Cheese Balls)

Recipe Ingredients

1 1/4 cups 78g / 2.8ozFlour
3/4 teaspoon 3.8mlBaking powder
1 tablespoon 15mlHot paprika
3   Eggs - separated
1 1/2 cups 219g / 7.7ozFreshly-crumbled goat cheese,
  Sheep's milk cheese, fontina or cheddar
3   Scallions - thinly sliced
3 cups 711mlExtra-virgin olive oil

Recipe Instructions

Preheat oil to 385 degrees.

In a mixing bowl, stir together flour, baking powder, paprika, egg yolks, crumbled cheese and scallions.

In a separate bowl, whisk egg whites to form peaks. Fold in cheese mixture, form 1-inch balls with a tablespoon and chill for 10 minutes.

Fry until golden brown, about 5 to 6 minutes, and serve hot.

This recipe yields 4 servings as tapas.
