Recipe Ingredients

1   Russet potato - boiled, peeled,
  And broken up
8   Garlic cloves - finely minced
1 teaspoon 5mlCrushed red pepper flakes
1   Saffron
1 1/2 cups 355mlExtra-virgin olive oil
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

In a large mortar, place potato, garlic, pepper flakes and saffron and grind to a smooth paste. Add oil, 2 tablespoons at a time, working like a mayonnaise until all the oil is incorporated and sauce is smooth and creamy. Season with salt and pepper and serve in a crock.
