Herbed Boston Lettuce Salad Recipe - Cooking Index
Boston lettuce is very delicate. This light Shallot Vinaigrette is just the right dressing for these leaves.
Courses: Salads2 | Large heads Boston lettuce - rinsed, dried, | |
And tough outer leaves discarded | ||
2 | Shallots - peeled, diced fine (large) | |
3/4 cup | 30g / 1.1oz | Small whole flat-leaf parsley leaves |
Coarse salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1/4 cup | 59ml | Shallot Vinaigrette - (see recipe) |
Place the lettuce leaves in a large salad bowl. Toss with the shallots and the parsley. Season with salt and pepper. Lightly toss with the Shallot Vinaigrette. Serve from the bowl or divide among 8 salad plates.
This recipe yields 8 servings.
