Green Beans Galore Recipe - Cooking Index
Test the beans for crispness and taste for tenderness before draining.
Type: Vegetables1/2 lb | 227g / 8oz | Green beans - cut into 1/2" pieces |
1 tablespoon | 15ml | Olive oil |
1 tablespoon | 15ml | Red-wine vinegar |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
2 tablespoons | 30ml | Crumbled blue cheese |
3 tablespoons | 45ml | Chopped flat-leaf parsley |
Cook beans in a pot of boiling, salted water until just tender, 3 to 4 minutes. Drain; rinse under cold water. Drain again; pat dry.
Toss beans with oil and vinegar. Season with salt and pepper. Toss gently with the blue cheese and chopped parsley.
This recipe yields 4 servings.
