Golden Pineapple Relish

For the best consistency, do not double this recipe. Rather, microwave two separate batches.

Recipe Ingredients

3 cups 438g / 15ozDiced (1/2") fresh ripe pineapple
1 cup 198g / 7ozSugar
1/2 cup 80g / 2.8ozGolden raisins
1/3 cup 48g / 1.7ozDiced (1/4") red bell pepper
1/3 cup 20g / 0.7ozDiced (1/4") white onion
1/4 cup 59mlCider vinegar
1/4 cup 23g / 0.8ozMinced crystallized ginger
1/2 teaspoon 2.5mlMinced garlic
1/4 teaspoon 1.3mlRed-pepper flakes
1   Ground cinnamon
  Salt - to taste

Recipe Instructions

Combine all of the ingredients in a microwave-safe casserole.

Cook, uncovered, on full power (650 to 700 watts) for 8 minutes. Stir, return to the microwave and cook another 8 minutes on full power. Cool.

Refrigerate, covered, for at least 6 hours for flavors to blend.

This recipe yields 2 cups.

Per tablespoon: 40 calories, 11g carbohydrates, no protein, no fat, no cholesterol.
