Goat Cheese Pita Pizza

A sprinkle of fresh lemon zest and parsley freshens all the flavors!

Serves: 2 people

Recipe Ingredients

1   Pita - (6 1/2" dia)
1/3 cup 78mlPrepared marinara sauce
3 oz 85gFresh goat cheese - broken into large
  Clumps
2 teaspoons 10mlFresh thyme leaves
  = (or 1/2 tspn dried thyme)
2 tablespoons 30mlFinely-slivered red onion
4   Imported black olives
1 tablespoon 15mlFinely-diced red bell pepper
1 tablespoon 15mlExtra-virgin olive oil
  Freshly-ground black pepper - to taste
1 teaspoon 5mlFreshly-grated lemon zest
1 tablespoon 15mlChopped flat-leaf parsley - for garnish

Recipe Instructions

Preheat the oven to 450 degrees.

Place the pita on a baking sheet. Spread sauce to within 1/2 inch of the edge; crumble cheese on top. Sprinkle with thyme, onions, olives and peppers. Drizzle with olive oil. Season with pepper.

Bake until the cheese is melted, about 10 minutes. When the pizza comes out of the oven, sprinkle with lemon zest and parsley. Serves 2 as an appetizer or 1 as an entree.

This recipe yields 2 servings.

Per appetzer serving: 390 calories, 24g carbohydrate, 17g protein, 25g fat, 45mg cholesterol.
