Dilled Red New Potatoes

When shopping for red potatoes, look for the very tiniest ones. They need not be "new" potatoes, but you'll know them as that. Do not buy red "boiling potatoes."

Recipe Ingredients

1/2 lb 227g / 8ozVery small red-skinned new potatoes - - (abt 8)
1 tablespoon 15mlUnsalted butter
1/2 tablespoon 7.5mlOlive oil
  Coarse salt - to taste
  Freshly-ground black pepper - to taste
1 teaspoon 5mlChopped fresh dill leaves

Recipe Instructions

Bring a pot of salted water to a boil. Add the potatoes and cook until tender but not mushy, about 8 to 10 minutes. Drain. Toss with butter and oil, then season with salt and pepper. Toss with dill.

This recipe yields 2 servings.

Per serving: 150 calories, 15g carbohydrate, 3g protein, 9g fat, 15mg cholesterol.
