Dilled Red New Potatoes Recipe - Cooking Index
When shopping for red potatoes, look for the very tiniest ones. They need not be "new" potatoes, but you'll know them as that. Do not buy red "boiling potatoes."
Type: Vegetables1/2 lb | 227g / 8oz | Very small red-skinned new potatoes - - (abt 8) |
1 tablespoon | 15ml | Unsalted butter |
1/2 tablespoon | 7.5ml | Olive oil |
Coarse salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1 teaspoon | 5ml | Chopped fresh dill leaves |
Bring a pot of salted water to a boil. Add the potatoes and cook until tender but not mushy, about 8 to 10 minutes. Drain. Toss with butter and oil, then season with salt and pepper. Toss with dill.
This recipe yields 2 servings.
