Apple Pineapple Raita Recipe - Cooking Index
I think of raitas as "cool downs" because they relieve the heat of Indian dishes.
Type: Fruit1 tablespoon | 15ml | Fresh lime juice |
1 | Granny Smith apple - cored | |
1 teaspoon | 5ml | Minced garlic |
1 | Fresh ginger - (abt 1") - peeled and grated | |
1 cup | 146g / 5.1oz | Crushed pineapple - drained |
1 1/2 cups | 355ml | Nonfat plain yogurt - drained |
1/2 teaspoon | 2.5ml | Salt |
1/4 cup | 10g / 0.4oz | Chopped fresh basil leaves |
Place the lime juice in a mixing bowl, coarsely grate the apple into the bowl and toss with the juice.
Add the garlic, ginger and pineapple; toss to combine. Drain the mixture in a strainer and return to the bowl. Add the yogurt and salt; mix together and fold in the basil. Cover and refrigerate at least 1 hour but no longer than 2 hours. Stir well before serving.
Per tablespoon: 15 calories, 3g carbohydrate, 1g protein, no fat, no cholesterol.
