Raspberry Sauce

Kirsch, a cherry-flavored liqueur, brings out the flavor of the raspberries rather than masking it.

Recipe Ingredients

2 cups 474mlFresh raspberries
1/4 cup 59mlKirsch
  = (or framboise [raspberry liqueur] or
  Eau-de-vie)
1 cup 198g / 7ozConfectioners' sugar
3 tablespoons 45mlFresh lemon juice

Recipe Instructions

Puree all the ingredients in a food processor; strain the sauce to remove the seeds. Store the sauce in the refrigerator in a covered container.

This recipe yields 1 cup to serve 8.
