Crispy Celery Salad Recipe - Cooking Index
Flat-leaf parsley is also known as Italian parsley. It's not only a different shape than curly-leaf parsley but also has a stronger flavor.
Courses: Salads5 | Outer celery ribs - (to 6) - trimmed, and | |
Thinly sliced on the diagonal | ||
Inner small celery ribs including leaves - chopped | ||
2 tablespoons | 30ml | Extra-virgin olive oil |
1 tablespoon | 15ml | Red-wine vinegar |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1/4 cup | 10g / 0.4oz | Small whole fresh flat-leaf parsley leaves |
2 tablespoons | 30ml | Coarsely-chopped mint leaves |
Place all of the celery in a bowl. Toss with the oil and vinegar. Season with salt and pepper.
Just before serving, toss with the parsley and mint. Serve immediately. It's delicious served on a bed of thinly sliced beets.
