Crispy Celery Salad

Flat-leaf parsley is also known as Italian parsley. It's not only a different shape than curly-leaf parsley but also has a stronger flavor.

Recipe Ingredients

5   Outer celery ribs - (to 6) - trimmed, and
  Thinly sliced on the diagonal
  Inner small celery ribs including leaves - chopped
2 tablespoons 30mlExtra-virgin olive oil
1 tablespoon 15mlRed-wine vinegar
  Salt - to taste
  Freshly-ground black pepper - to taste
1/4 cup 10g / 0.4ozSmall whole fresh flat-leaf parsley leaves
2 tablespoons 30mlCoarsely-chopped mint leaves

Recipe Instructions

Place all of the celery in a bowl. Toss with the oil and vinegar. Season with salt and pepper.

Just before serving, toss with the parsley and mint. Serve immediately. It's delicious served on a bed of thinly sliced beets.
