Fried Green Tomatoes Recipe - Cooking Index
4 teaspoons | 20ml | Green (unripe) tomatoes (medium) |
1/3 cup | 20g / 0.7oz | Stone-ground cornmeal |
1/3 cup | 36g / 1.3oz | Atkins Bake mix |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
3 tablespoons | 45ml | Vegetable oil |
Cut tomatoes crosswise into 1/2-inch thick slices. In a shallow plate combine cornmeal, bake mix, salt, and pepper. Press tomato slices in cornmeal mixture to lightly coat.
Heat oil in a large nonstick skillet over medium-high heat. Fry tomatoes in batches, 8 to 10 minutes, turning once, until golden. Drain on a wire rack, or pat with paper towels to remove excess oil.
This recipe yields 4 servings.
