Coconut Cookies

Recipe Ingredients

  Butter - for greasing pan
1/2 cup 55g / 1.9ozAtkins Bake Mix
1/3 cup 30g / 1.1ozShredded unsweetened coconut
1/4 cup 36g / 1.3ozCoarsely-chopped hazelnuts
2   Egg whites
2 tablespoons 30mlSeltzer
1/2 teaspoon 2.5mlCoconut extract
8 tablespoons 120mlButter - (1 stick) - softened
6   Sugar substitute

Recipe Instructions

Heat oven to 375 degrees. Generously butter a baking sheet.

In large bowl, combine bake mix, coconut, nuts, egg whites, seltzer, extract, butter and sugar substitute. Mix well.

Drop by rounded tablespoonsful on to prepared baking sheet. Bake 20 minutes, until light golden.

Cool cookies on baking sheet 1 minute before transferring to wire racks to cool completely.

This recipe yields 20 cookies.
