Beef Stew

You can add some other vegetables such as zucchini, eggplant, green beans, but be sure to adjust the carb counts.

Recipe Ingredients

2 lbs 908g / 32ozStew beef
4   Turnips - peeled, and
  Cut into chunks
1   Onion - coarsely chopped
1   Diced tomatoes - (15 oz)
  Italian seasoning - to taste
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Brown beef in a skillet in a small amount of oil. You are just searing the outside, don't worry about cooking through.

Place all ingredients in a stew pot, add enough water to just cover. Heat to boiling. Reduce heat and simmer for at least 30 minutes.

Dissolve cornstarch in a small amount of cold water, and stir into the stew. Return to boil, and allow to boil until broth is thicker.

This recipe yields 6 servings; 9.5 carb grams per serving.
