Veggie Kebabs Recipe - Cooking Index
3 tablespoons | 45ml | Olive oil |
1 teaspoon | 5ml | Dried thyme |
1/2 teaspoon | 2.5ml | Salt |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
2 teaspoons | 10ml | Zucchini - scrubbed, and (medium) |
Cut into 2" pieces | ||
2 | Red bell peppers - seeded, and | |
Cut into 2" pieces | ||
18 | White mushrooms - washed, and (large) | |

Combine oil, thyme, salt, and pepper in a very large bowl or 2 gallon resealable bag.
Add vegetables, toss to coat. Marinate 30 minutes. Thread vegetables on 6 metal skewers. Grill over medium heat 15 minutes, turning occasionally, until vegetables are crisp-tender and have grill marks.
This recipe yields 6 servings.
