Veggie Kebabs

Recipe Ingredients

3 tablespoons 45mlOlive oil
1 teaspoon 5mlDried thyme
1/2 teaspoon 2.5mlSalt
1/2 teaspoon 2.5mlFreshly-ground black pepper
2 teaspoons 10mlZucchini - scrubbed, and (medium)
  Cut into 2" pieces
2   Red bell peppers - seeded, and
  Cut into 2" pieces
18   White mushrooms - washed, and (large)
  Stems removed

Recipe Instructions

Combine oil, thyme, salt, and pepper in a very large bowl or 2 gallon resealable bag.

Add vegetables, toss to coat. Marinate 30 minutes. Thread vegetables on 6 metal skewers. Grill over medium heat 15 minutes, turning occasionally, until vegetables are crisp-tender and have grill marks.

This recipe yields 6 servings.
