Snow Pea, Pepper And Cabbage Salad Recipe - Cooking Index
2 tablespoons | 30ml | Olive oil |
1 1/2 tablespoons | 22ml | Rice wine vinegar |
1 teaspoon | 5ml | Salt |
1/2 | Sugar substitute | |
1/2 lb | 227g / 8oz | Snow peas |
3 cups | 711ml | Shredded green cabbage - (abt 1/2 lb) |
1 | Red bell pepper - thinly sliced | |
3 | Green onions - thinly sliced | |
1/4 cup | 36g / 1.3oz | Fresh chopped mint |
Mix olive oil, vinegar, salt and sugar substitute in a small bowl. Place snow peas with enough water to cover in a microwave-safe bowl. Cover with plastic wrap; microwave on high one minute. Drain and slice in thirds lengthwise.
Mix snow peas, cabbage, pepper, onion and mint in a large bowl. Add dressing; toss to coat. Chill 15 minutes to blend flavors.
