1/4 lb | 113g / 4oz | Green beans |
1/4 cup | 59ml | Zucchini strips |
1/4 cup | 59ml | Sliced mushrooms |
1/4 cup | 59ml | Red bell pepper - cut into strips (small) |
Dressing | ||
1/4 cup | 59ml | Olive oil |
2 | Green onions - chopped | |
1 | Garlic clove - pressed (large) | |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
2 tablespoons | 30ml | Chopped fresh parsley |
Prepare spaghetti according to package directions. Add vegetables to pasta water during last 5 minutes of cooking time. Drain pasta and vegetables; return to pot.
For the dressing: In a small microwave-safe cup, mix oil, green onions and garlic. Cook on high 45 seconds to 1 minute, until garlic begins to color. Pour dressing over pasta; sprinkle with salt, pepper and parsley. Toss well and serve immediately.
