Recipe Ingredients

8 oz 227gAtkins Pasta Cuts spaghetti
  = (half of a 1-lb box)
1/4 lb 113g / 4ozThin asparagus
1/4 lb 113g / 4ozGreen beans
1/4 cup 59mlZucchini strips
1/4 cup 59mlSliced mushrooms
1/4 cup 59mlRed bell pepper - cut into strips (small)
  Dressing
1/4 cup 59mlOlive oil
2   Green onions - chopped
1   Garlic clove - pressed (large)
1/2 teaspoon 2.5mlSalt
1/4 teaspoon 1.3mlFreshly-ground black pepper
2 tablespoons 30mlChopped fresh parsley

Recipe Instructions

Prepare spaghetti according to package directions. Add vegetables to pasta water during last 5 minutes of cooking time. Drain pasta and vegetables; return to pot.

For the dressing: In a small microwave-safe cup, mix oil, green onions and garlic. Cook on high 45 seconds to 1 minute, until garlic begins to color. Pour dressing over pasta; sprinkle with salt, pepper and parsley. Toss well and serve immediately.
