In a large saucepan over medium heat, melt butter. Add onion; cook 5 minutes, until softened. Add garlic and cook 1 minute more. Add tomatoes and ginger and cook 5 minutes, stirring occasionally.
Stir in greens. Mix well, cover and cook 5 minutes, until wilted. Season with salt and pepper to taste.
