Manhattan-Style Creamed Spinach Recipe - Cooking Index
1 tablespoon | 15ml | Butter |
1/2 tablespoon | 7.5ml | Onion - chopped (small) |

1/2 cup | 118ml | Reduced-sodium chicken broth |
1/2 cup | 118ml | Heavy cream |
1/2 teaspoon | 2.5ml | Salt |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
1/8 teaspoon | 0.6ml | Freshly-ground nutmeg |
2 | Frozen leaf spinach - (10 oz ea) - thawed, squeezed dry |
In a medium skillet, melt butter over low heat. Cook onion and green onions 5 minutes, until softened. Stir in broth, cream, salt, pepper, and nutmeg. Bring to a boil. Reduce heat to medium and cook 15 minutes, until liquid is reduced to 2/3 cup, and is thick enough to coat the back of a spoon.
Chop spinach; add to sauce and mix very well. Cook, stirring occasionally, 5 minutes, until very hot.
