Manhattan-Style Creamed Spinach

Recipe Ingredients

1 tablespoon 15mlButter
1/2 tablespoon 7.5mlOnion - chopped (small)
2   Green onions - chopped
1/2 cup 118mlReduced-sodium chicken broth
1/2 cup 118mlHeavy cream
1/2 teaspoon 2.5mlSalt
1/2 teaspoon 2.5mlFreshly-ground black pepper
1/8 teaspoon 0.6mlFreshly-ground nutmeg
2   Frozen leaf spinach - (10 oz ea) - thawed, squeezed dry

Recipe Instructions

In a medium skillet, melt butter over low heat. Cook onion and green onions 5 minutes, until softened. Stir in broth, cream, salt, pepper, and nutmeg. Bring to a boil. Reduce heat to medium and cook 15 minutes, until liquid is reduced to 2/3 cup, and is thick enough to coat the back of a spoon.

Chop spinach; add to sauce and mix very well. Cook, stirring occasionally, 5 minutes, until very hot.

This recipe yields 6 servings.
