Leeks Under Cheese Recipe - Cooking Index
1 tablespoon | 15ml | Butter |
1 tablespoon | 15ml | Canola oil |
4 | Leeks - trimmed, cleaned, | |
And cut into 3" pieces | ||
1/2 cup | 118ml | Reduced sodium chicken broth or water |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1/3 cup | 48g / 1.7oz | Shredded Gruyere cheese |
1/3 cup | 48g / 1.7oz | Grated Parmesan cheese |
In an ovenproof skillet, melt butter and oil over medium-high heat. Add leeks and cook 5 minutes until they begin to "sweat" (release liquid). Add broth, salt, and pepper. Cover and continue cooking 15 minutes until leeks are tender. Uncover and boil off liquid in the skillet.
Heat broiler. Sprinkle leeks evenly with cheese. Broil 3 to 4 minutes, 5 inches from heat source, until browned.
