Leeks Under Cheese

Recipe Ingredients

1 tablespoon 15mlButter
1 tablespoon 15mlCanola oil
4   Leeks - trimmed, cleaned,
  And cut into 3" pieces
1/2 cup 118mlReduced sodium chicken broth or water
1/4 teaspoon 1.3mlFreshly-ground black pepper
1/3 cup 48g / 1.7ozShredded Gruyere cheese
1/3 cup 48g / 1.7ozGrated Parmesan cheese

Recipe Instructions

In an ovenproof skillet, melt butter and oil over medium-high heat. Add leeks and cook 5 minutes until they begin to "sweat" (release liquid). Add broth, salt, and pepper. Cover and continue cooking 15 minutes until leeks are tender. Uncover and boil off liquid in the skillet.

Heat broiler. Sprinkle leeks evenly with cheese. Broil 3 to 4 minutes, 5 inches from heat source, until browned.

This recipe yields 4 servings.
