Acorn Squash With Spiced Applesauce And Maple Drizzle Recipe - Cooking Index
1 | Acorn squash - (abt 1 1/2 lbs) - deseeded, and cut into 6 wedges | |
2 teaspoons | 10ml | Olive oil |
1/4 teaspoon | 1.3ml | Salt |
1/8 teaspoon | 0.6ml | Freshly-ground black pepper |
3/4 cup | 177ml | Unsweetened applesauce |
2 teaspoons | 10ml | Butter |
1/8 teaspoon | 0.6ml | Ground cinnamon |
1 tablespoon | 15ml | Atkins Sugar Free Pancake Syrup - warmed |
Heat oven to 375 degrees. Brush squash with oil and sprinkle with salt and pepper. Place on a jelly roll pan lined with aluminum foil. Bake until squash is fork tender, about 20 minutes.
In a small pot heat the applesauce. Stir in butter and cinnamon; cook 1 minute more.
Serve squash with a dollop of applesauce and a drizzle of syrup.
