Ricotta Frittata

Recipe Ingredients

6   Eggs
  Salt - to taste
  Freshly-ground white pepper - to taste
1 cup 146g / 5.1ozRicotta cheese
1/4 cup 36g / 1.3ozFreshly-grated Parmesan cheese
1 1/2 tablespoons 22mlChopped marjoram
1 tablespoon 15mlGarlic clove - crushed (small)
2 tablespoons 30mlMixture olive oil and melted butter

Recipe Instructions

Preheat broiler.

Beat eggs with 3/4 teaspoon salt and white pepper to taste. Stir in cheeses, marjoram and garlic.

Heat oil and butter in 8- or 10-inch skillet. Add egg mixture and lower heat. Cook until set, about 12 minutes, then brown 4 to 6 inches under broiler. When done, slide frittata onto a plate.

This recipe yields 6 servings; 2 carb grams per serving.
