Classic White Sauce Recipe - Cooking Index
2 tablespoons | 30ml | Butter or European style butter (Plugrá) |
2 tablespoons | 30ml | Full-fat soy flour |
1/2 cup | 118ml | Heavy cream |
1/2 cup | 118ml | Cold water |
Salt - to taste | ||
2 | Egg yolks (large) | |
1 | Freshly-ground white pepper |
Melt butter in a heavy saucepan over low heat. With a wire whisk, stir in soy flour, and cook a few minutes until thoroughly blended.
Combine cream and water and add slowly to the butter-flour mixture, stirring constantly with the wire whisk. Add salt and pepper to taste.
Heat to scalding, then beat in egg yolks, 1 at a time. Do not allow mixture to boil.
This recipe yields 1 cup sauce; 8 carb grams in entire recipe.
