Taco Meatballs Recipe - Cooking Index

| 1 | Taco seasoning mix | |

| 1 | Green onion - finley diced | |
| 2 | Eggs | |
| 1 | Garlic clove - minced (optional) | |
| 1 | Sharp cheddar cheese - cut small cubes |
Preheat the oven to 425 degrees.
Beat eggs and mix all ingredients except the cheese together. Mold a tablespoon of meat around a cube of cheese to form a small shaped meatball.
Repeat with all meat. Place on edged cookie sheet (sprayed with Pam) and bake at 425 degrees for 7 to 10 minutes or until meat is done and cheese has melted.
This recipe yields 10 to 15 servings; less than 1 carb gram per meatball.
